Nell's Chicken Soup

This is a filling and nutritious meal, great comfort food for these chilly winter evenings. It tastes different with and without the yogurt, so try it both ways. Add vegetables if you want a full meal.

2 tablespoons of butter or oil
¼ cup oat flour
OR
2 tablespoons arrowroot
3 cups chicken broth, skimmed
½ cup chicken, cooked and shredded
salt and pepper to taste
1 cup plain lowfat yogurt, optional
Garnish: minced green onion or chives

Melt the butter in a 3-quart pot. Sprinkle the flour over the melted butter and stir well. Slowly whisk in the broth. Cook over low heat until smooth and slightly thickened. Add the chicken, salt and pepper to taste.

         If you like and can tolerate it, stir in the plain yogurt just before serving. Heat another minute or so, without boiling, until the soup is steamy. Garnish each serving with minced green onion or chives.
